Easy Chicken Cacciatore Recipe

I always get compliments on my Italian food, so I thought I'd share one of my recipes with you all. This one is for Chicken Cacciatore. Please keep in mind that I don't measure spices. I generously season to taste.


I was feeding 8 people so this is a double recipe. You can easily cut this recipe in half for a family of 4.

 
Ingredients:
  • 4 lb Chicken Breast
  • 2 Cans/Jars Pasta Sauce {I use Hunt's Chunky Vegetable}
  • 1 box Fettuccine noodles
  • 1 Green Pepper
  • 1 Package Mushrooms
  • 1 Onion {not shown}
  • Salt
  • Pepper
  • Italian Seasoning
  • Garlic
  • Minced Garlic
Directions:


Cut chicken into strips, place into large frying pan {with lid if you have one}, season with all spices but minced garlic and cook thoroughly over medium heat.


Once chicken is cooked all the way through, drain grease then lower heat to a simmer. Add mushrooms, green pepper and onion. Simmer for about 10 minutes.


Add sauce. Season generously with Salt, Pepper, Italian Seasoning, Garlic and Minced Garlic. Cover and simmer for 30-45 minutes or until vegetables are tender.


Serve over noodles and top with Parmesan Cheese. Serve Homemade Cheesy Garlic Bread on the side! Enjoy!
