I'm a day late with National Strawberry Day, which is February 27th, but, I don't think it's makes me a dollar short! Strawberries should be celebrated every day!
Did you know that the Strawberry is not a true berry? Unlike blueberries, which have seeds on the inside, strawberries seeds on on the outside.
Native Americans called these yummy fruits "heart-seed berries" and used them in their cornmeal recipes. Colonists loved the taste so much, they attempted to replicate the flavor and instead, invented one of America's favorite summer time treats, Strawberry Shortcake.
Each strawberry averages 200 tiny, yellow seeds!
On the healthy side, one cup of strawberries is roughly 55 calories and contains almost double the vitamin C a person needs in one day! They're also naturally contain folic acid, about 8 strawberries contain 20% of your daily folic acid need. What a great, sweet treat if you're expecting!
Although Strawberries are not currently in season, there are a variety of ways to enjoy them. In jams, jellies, purees and in my favorite form, yogurt! So, why not enjoy a delicious and healthy treat during these chilly days of February using Emmi Swiss Low Fat Yogurt!
Swiss Yogurt Parfait Ingredients
- 4 (6 ounce) Emmi Swiss Yogurt in Strawberry
- 1 cup granola (I recommend a vanilla almond)
- 6-8 strawberries, sliced
- Almonds and mint sprigs for garnish (optional)
Directions
- Layer granola, strawberries, and Swiss yogurt in 4 glass serving dishes Garnish with almonds and mint sprig (optional)
- Refrigerate until ready to serve
