When I think of summer I imagine two things when it comes to food – Grilling and Salads. The smell of summer roasting on the open fire and the coolness of crisp lettuce and vegetables marinated in lovely dressing. There is always one thing I love more than anything on my salads too, Feta cheese. It doesn’t even have to be a Greek salad, just any salad! Also, we once grilled Feta on the BBQ and oh sweet heaven, it was good. We’ll get to how I did that in a bit. First let me tell you about what Feta I purchase!
I have actually only purchased Athenos Feta Cheese. Ever. I’m not even exaggerating. It is my Feta of choice and as it comes in a brick, crumbled and even in hummus mixes there hasn’t been any reason to choose another brand. Plus, if you have been around awhile then you know I am partial to companies that offer coupons and Athenos offers great coupons in Sunday papers often.

None of these recipes requires you to be some great chef. They’re beautiful, delicious recipes that are easy to make, they’re cool dishes for the summer, but the Scallops and the Pasta give it a very hearty flavor that keeps you full. Now I promised to tell you how to make that great grilled Athenos Feta Cheese. It’s really simple! And this way you don’t have to set it on fire like Saganaki, you know Opa! Tastes just as great without the entertainment.
First off, you have to get the chunk of Athenos Feta, not the crumbles. Once you remove it from the packaging, pat it dry with a paper towel on both sides, then set it on a sheet of foil.
You will need 1 lemon or some lemon juice, spritz the cheese with lemon and then place 2 fresh Basil leaves on top. Wrap the cheese with the foil tightly and then set it on the grill. Leave it on the grill for 15-20min. OR you can roast it in the oven at 375′ for 15-20 min without the foil.
Very simple. Very Summer! Opa!
