We are big popcorn poppers around my house. In fact, my husband and I met at a movie theater, so popcorn has become almost a running gag or private joke with our family. My three year old just loves it as well, in any shape, flavor, or form! I recently realized, with how much he eats, that he was not only getting popped corn kernels but all sorts of unnecessary additives and who knows what?! So, trust me when I say, it’s super easy and super fun to make homemade popcorn whenever you want it!
Ingredients
- 1/4 cup vegetable oil
- popcorn kernels
- 3 tablespoons of butter
- 5 tablespoons of brown sugar
- 1/2 tablespoon vanilla extract
- 3/4 bag of mini marshmallows
Directions
- Pour vegetable oil into bottom of a deep pot and place one kernel. Place lid on top.
- Slowly and gently, shift pot over burner over medium heat until kernel pops.
- Cover just the bottom of pot with more kernels. Do not layer.
- Place lid back on and gently shift pot until all kernels pop. Remove from heat as popping slows.
- In a saucepan, melt butter.
- Whisk in brown sugar and vanilla extract. Whisk until smooth, then whisk for an additional two minutes.
- Place popcorn in bowl and mix with marshmallows.
- Drizzle with caramel mixture and gently fold.
