I love baking and discovering new ways to use seasonings and other flavorings. During the winter, I go baked goods crazy and can never seem to get my hands on enough vanilla and almond extract! I was lucky enough to get to try out some amazing flavors from Nielsen-Massey in Madagascar Bourbon Vanilla Extract, Pure Almond, Pure Chocolate, and  Pure Peppermint Extract. My baking life has been changed, for the better, thanks to these extracts!

Nielsen-Massey Madagascar Bourbon Vanilla Extract is the most delicious vanilla extract I've ever had the pleasure of tasting. With velvety, creamy sweet undertones, it's the perfect touch to delicate desserts and surprisingly, cuts the acidic tones to red sauces like marinara. I was surprised at all the different ways you could use vanilla outside of chocolate chip cookies! When I make Beer Bread from scratch, I now add a teaspoon of vanilla to enhance the lager and compliment the fresh black pepper I put in mine. Outside of food, vanilla, which comes from the orchard family, is used by fisherman to mask their smell from fish! A few drops in a can of paint can help eliminate the unpleasant odor. Just like coffee or wine, vanilla beans from different areas of the world have different flavors or undertones. And, just like a good wine, Madagascar Bourbon Vanilla Extract will age, developing flavor during its shelf life of three years. I'm going to put mine in the back of my cabinet and not touch it again until near the end of the year, I'm very excited to see the change in taste profile.

Both the Pure Almond Chocolate are excellent as well, but I was all about the Pure Peppermint Extract the last few months. I am a peppermint fiend, but have never baked or cooked with it before. I've been kicking myself ever since I cracked the bottle open! This peppermint extract is both warm and cool, with a thick mint scent. My Peppermint Sugar Cookies were a big hit and we even left out a few for Santa. In the summer time, I will be trying the Peppermint Pesto Chicken Kabobs from the Nielsen-Massey website, which sound refreshing and delicious!

If you've only been using artificial flavoring your whole life, then you've been missing out extraordinary baked goods and dishes. Pure extracts have intense, rich flavors that leave you wanting more, unlike artificial extracts which leave bitter, unpleasant flavors on the back of the tongue. With a variety flavors that also include Pure Coffee, Orange Blossom, and Pure Lemon, among others, so whatever type of dish you're cooking or baking will be the best taste it possibly could be.
