Did you know that it’s National Grilled Cheese Month? I swear, it’s an ooey, gooey, delicious truth! And there are more ways to celebrate this cheesy month than a slice of American cheese stuck in the middle of some plain white bread!
Udi’s Gluten Free Foods implemented a fun challenge, create a sandwich that’s fun for breakfast, lunch, dinner, or even dessert that steers from away ordinary to extraordinary! Armed with a few loaves of their delicious Gluten-Free bread in hand, I decided on a simple to make, but lip smacking good sandwich!
First, I washed and chopped up four large strawberries we bought from the local farmer’s market. Dice them like you’re making strawberry salsa. Next, I drizzled the bowl with one half tablespoon honey, one tablespoon strawberry jelly and half the zest of a lemon.
Now, mash your bowl with three tablespoons of cream cheese. You want to make sure it’s all thoroughly mixed together. Does it look unappealing? Great! That means it’s all mashed up perfectly. I didn’t take any pictures because it really wasn’t the prettiest looking spread, but, it sure does taste great!
In a skillet, melt one half tablespoon of butter. While the butter is melting, grab a slice of Udi’s Gluten Free Omega Flax and Fiber Bread and generously spread the mixture on one side. Place another slice on top and put into your now browed butter. Grilled until golden brown, remove from skillet and melt more butter. Flip sandwich and grill that side until golden brown as well.

| It’s so crunchy and sweet |
This sandwich is perfect for breakfast or dessert! The mixture inside is sweet and creamy with a nice slight zing from the lemon zest. The bread takes on a great crispy crunch with a few complex notes thanks to the browning of the butter first. Udi’s bread is the perfect size, without being too small, to satisfy a sweet tooth and really hits the spot on a cool morning!
