With school starting back up next week, all things school have been on my mind nonstop. From easy weeknight recipes to supply lists and programs like Labels for Education, you name it and I’ve probably thought about it. I’ve got it all almost covered though, including some pretty tasty and quick recipes.
Lil Man and I were at Walmart the other day finishing up some last minute school shopping and grabbing stuff for dinner. Right from my smartphone, we found a great Campbell’s Soup recipe for 2-Step Inside-Out Chicken Pot Pie that seemed easy enough. So we grabbed a few cans of Campbell’s Cream of Chicken Soup and went on our merry little way.
This was by far the easiest chicken pot pie recipe I have ever made. The fact that it’s quite delicious too boot has me sold and this will be one of our go to meals for busy school nights. We have a large family, so this recipe feeds 8, but you can easily half this recipe for a family of four.
You’ll need the following ingredients:
- 2 lbs boneless chicken breasts, cut into 1-inch pieces
- 3 cans (10 3/4 oz) Campbell’s Condensed Cream of Chicken Soup
- 2 bags (12 oz each) frozen vegetable combination (carrots and peas)
- 2 cans (15 oz) dices potatoes
- 20 hot biscuits, split
- salt and pepper to taste
You’ll cook your chicken all the way through over medium-high heat, using a large skillet with a lid.
Once the chicken is cooked through, you’ll stir in the soup, vegetables, salt and pepper, cover, reduce the heat to low and simmer for 10 minutes.
Serve the chicken and sauce over the biscuits and enjoy! See, I told you it was easy!
